Califlower puree

Cauliflower is an excellent canvas for other flavors. To garnish this creamy side dish, saute a few sliced cauliflower florets in a bit of butter until tender and lightly golden. Combine cauliflower and water or chicken stock in a medium saucepan, and bring to a boil over high heat. Reduce heat to a simmer, and cook until cauliflower is very tender.


This clean and simple cauliflower purée is made by simmering and then puréeing cauliflower and aromatics in a liqui like cream or chicken stock. Place cauliflower , water, butter, and salt in a saucepan and cover with lid.

Begin heating on high to start steaming quickly, then reduce heat to medium and continue steaming until cauliflower is tender and there is little water left in the pot. Be sure to check on your cauli every few minutes to prevent scorching. This adds flavor and eliminates the need to add cream to thin out the purée. Begin by bringing the chicken broth and salt to a boil.
